Disney Kitchen - Cinnamon Glazed Pecans / Almonds

I am a sucker for a sweet treat, and I'm quite partial to this Walt Disney World favorite in particular. At various locations around the parks, guests can partake in a handy little snack that is guaranteed to satisfy those who love to have something to pick on throughout the day - cinnamon glazed pecans or almonds! They come in a paper cone that easily folds over, to store in a pocket or bag for future sweet tooth pacification, and you can obtain these little beauties for less than $5!



Even though I visit the parks frequently, I still hate to restrict my edible indulgences to park visits. And as you may have noticed, I often have an urge to duplicate my favorite "out" items "in" at home. This recipe was a rather tricky one to duplicate, but it appears deceptively simple. I found many copycat recipes for this one, and they were all quite different. Most were also scaled to make large quantities. Being that I am the only true nut lover in my household, I had to play with the quantities and ingredients a bit, and try a few different approaches. I finally found the balance of ingredients that worked just right for me. For a cinnamon lover seeking two-ish servings, here we go with my copycat recipe for Disney's Cinnamon Glazed Nuts!

Ingredients:

  • 1 egg 
  • 1/4 tsp salt
  • 1/4 tsp water
  • 1/2 tsp cinnamon
  • 1/3 cup sugar
  • 1/3 cup butter, melted
  • 1 (6 oz) package almonds
Step 1: Preheat oven to 250F. Combine the egg, butter and water. Whip it all up into a nice, frothy mixture. I used a deep, tall, seal-able container that allowed me to really beat the mix well.



Step 2: In a small mixing bowl, combine sugar, salt and cinnamon. After making multiple batches, I found 1/2 tsp to be the perfect amount of cinnamon for this serving amount. You can play with the amount depending on the flavor strength you hope to achieve.


Step 3: Add nuts to the buttery mixture. I opted for a 6 oz. bag of pecans, but obviously this works for almonds too. I found this size package to be just right for a couple of servings. These don't store too well, so unless you plan on accommodating an army or a party, don't overdo the quantity!


Step 4: As you can see, it doesn't look to be a proportionate mix right now, but you don't want your pecans to mush up and go soggy. The goal is to coat them in the sticky ooze, but not to drench them. I found a fun way to accomplish this task thoroughly... I sealed the container and shook it like crazy! 


Step 5: Once well coated, dump the pecans (along with any residual mixture) into the bowl of dry ingredients, and mix it all up like mad! The sticky coating on the pecans will grab the dry ingredients - make sure everything is evenly distributed, and spread out the mix in a flat layer across a greased baking sheet or pie pan. 


Step 6: Bake your yummy concoction for 45 minutes, making sure to stir it up and re-spread the pecans every 15 minutes. As it bakes, the oozy mixture will begin to crisp and solidify into that familiar, sugary coating.



Freshly baked and warm, these are the best! I still found them appealing throughout the evening, but less so as they sat around. By the next morning, I was no longer impressed with my creation - even stored covered at room temperature. SOOOO, pop these babies while their hot... from mix to made in about an hour, in your very own Disney kitchen!
