NORTH CAROLINA - THE SWAG TO HOST 2017 END-OF-SEASON MOUNTAINTOP COOKING SCHOOL NOVEMBER 12-14


Waynesville, NC - - November 3, 2017 - -  Fall dishes will be featured at The Swag’s 2017 End-Of-Season Mountaintop Cooking School taking place November 12-14 at the mountaintop inn. The hands-on cooking school will feature ingredients fresh from The Swag’s abundant garden along with products from local farms.

The Swag’s Executive Chef Jake Schmidt will oversee each two-hour class taking place in the morning and afternoon each day. Day one will be devoted to the hors d’oeuvres and salad or soup course and day two will feature the main course and dessert. All guests will receive recipes along with a Swag  apron.  
Dishes prepared include:  Roasted butternut squash soup, curried cashews and rosemary; beet salad, roasted carrots, goat cheese and greens; duck leg confit, cassoulet with turnips and guanciale and pumpkin cheesecake, seed crumble.
Chef Schmidt spent six years at the Omni Grove Park Inn, first as Chef de Cuisine, then Executive Sous Chef and, finally, as Executive Chef of the resort’s a la carte restaurants.  Prior to this, Schmidt, who attended Kendall College in Evanston, IL, was the Executive Sous Chef of Chicago’s famed Signature Room for three years.  
The three-night program features an evening social hour and hors d’oeuvres on the dog trot, two daily cooking classes and a farewell picnic lunch overlooking the Blue Ridge Mountains. The Swag’s 2017 End-Of-Season Mountaintop Cooking School package starts at $520 per night, plus tax. Price also includes a hearty breakfast, daily lunch, four-course dinner and a welcome gift.
